Reinventing the Incredible Edible Egg

You are getting back to the swing of things, and the kids are getting back to school-at times it can be somewhat stressful. You don’t have to sacrifice eating healthy, though, just because you and your family are busy. Of course, we all hear that breakfast is the most important meal of the day, but with all the craziness of the morning rush, do we really make it a priority?
It is so much easier to hand your kids a pop-tart or fix them a bowl of sugary cereal, but that is not what our kids need to give them long lasting energy to make it through the day. Get back to the basics, crack open an egg, and in less than 5 minutes you can have a healthy nutritious breakfast that you can feel good about feeding your kids.

Mini Breakfast Pizza
Who says you can’t have pizza for breakfast!
Try this easy recipe and I promise your kids will be asking for more!
- 1 Large Egg, beaten
- 1-2 Tablespoons of Marinara or Pesto Sauce
- 1 Whole-wheat Muffin, spilt
- Cheese (I prefer to slice Fresh Mozzarella,
- but feel free to use any kind)
- Turkey pepperoni (optional)
Spoon marina or pesto sauce -(I have one child who loves “red” pizza and one who loves “green”)-on top of whole-wheat muffin, add your cheese, and toast until cheese is melted and bread is warm. Scramble the egg, and place it on top of the muffin. Garnish with pepperoni.
Breakfast Burrito
This is a breakfast staple in our house.
My kids love these!
- 1 whole-wheat flour tortilla
- 2 eggs, beaten
- 1/3 cup cheddar cheese
- Salsa
Scramble eggs with cheese. Heat tortilla in microwave for 20-30 seconds. Fill tortilla with eggs. add salsa. Enjoy! * My boys love to drizzle a little bit of ranch in theirs too!
